drivers: gpio: retire pca953x driver #78273

pca953x driver can be replaced by pca_series driver, which covers a larger number of devices.

This is a follow-on to #69333

I 've validated the driver as much as I can, but I doesn't have the required hardware to test this pr. Perhaps I should open an issue and call on the adoption on the new driver, instead of deleting the old driver myself?

Never done such things before...

The old driver needs to be deprecated first and then can be removed in two release cycles.
